Zucchini Fritters
Surprise your family with this vegetable side dish. The patties are crisp on the outside and loaded with flavor on the inside.
Ingredients
- 1/3 cup whole wheat flour
- 1/4 cup yellow cornmeal
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon garlic salt
- 1/8 teaspoon ground red pepper
- 2 small zucchini, shredded (about 1 3/4 cups total)
- 1/4 cup finely chopped red onion
- 2 egg whites
- 1 tablespoon vegetable oil
- 1 tablespoon water
- 1 1/2 cups Kellogg’s® Special K® Multi-Grain cereal (crushed to 3/4 cup)
- Olive oil cooking spray
- 1/3 cup fat free plain Greek yogurt
Directions
1. In small bowl stir together whole wheat flour, cornmeal, baking powder, garlic salt and red pepper. Set aside.
2. In medium bowl toss together zucchini and onion. Sprinkle flour mixture over top. Toss to combine. Let stand for 10 minutes.
3. Whisk together egg whites, oil and water. Stir KELLOGG’S SPECIAL K Multi-Grain cereal and egg white mixture into zucchini mixture. Using well-rounded tablespoons, drop zucchini mixture into 16 mounds on baking sheet lined with foil and coated with cooking spray. Use spatula to slightly flatten each mound into 2- to 2 1/2-inch circles. Lightly coat tops of patties with cooking spray. Bake, uncovered, at 425°F for 10 to 12 minutes or until golden brown, turning once after 5 minutes.
4. Serve warm topped with yogurt.
